Gluten-free Motley Meatloaf Strips
Strips of meatloaf paired with some veggies makes an easy night's dinner. Cut it up into different shapes each time for a unique presentation. Meatloaf. Brings back childhood memories of quick, after school meals, served with rich mashed potatoes and corn. Yum! And oy, such the 'heavy' meal!

Reinvent your meatloaf recipe by adding different, fresh ingredients to it, bake it in smaller pans, cut it up into different shapes and sizes, and keep the dinner plate a suitable size. There are a motley amount of choices to turn up the taste, and dial down the calories. Our family meatloaf recipe has been around for years. It started with Betty Crocker, then to gram, mom, my seester, and then a fellow meatloaf fan's additions.


Here's my staple gluten-free version - feel free to adjust spices as your taste buds desire.

Ingredients
  • 1 1/2 pounds 90% lean ground beef
  • 3 slices Udi's g-free bread torn into pieces
  • 1 egg
  • 1 small onion chopped (about 1/2 cup)
  • 1 tablespoon Worcestershire sauce
  • 1 egg
  • 1/2 cup spinach finely chopped
  • 1/2 cup red or green bell pepper finely chopped
  • 1 teaspoon Trader Joe's Everyday Seasoning
  • 1/2 teaspoon Italian Seasoning or Herby Seasoning
  • ketchup for topping
Instructions
  1. Combine all ingredients in a large bowl. Add your favorite motley mixture of spices.

  2. Combine all ingredients in a large bowl (use your hands!!!).
  3. Place the mixture into an ungreased baking pan - loaf size (9x5x3) or similar, depending on your desired serving 'creation'.
  4. Drizzle ketchup on top during baking for added flavor.

  5. Cook uncovered in 350* oven until done, about 1 1/2 hours. (Drain grease while baking if your meat is fatty.)
  6. Voila - your meatloaf is finished. Drain any visible grease and slice into fun shapes and sizes for serving.

  7. Remove from pan and let the creative portion shapes begin! Serve with vegetables.
  8. Serves 4-6.
