Beef Lettuce Wraps
Gluten-free Beef Lettuce Wraps

Impress yourself with a light, wonderful, balanced meal that's as easy to make as it is fun! It involves some chopping, slicing, steaming and sautéeing ~ a treat to involve your friends (parents, neighbors, older kids,...) in.

Combine any veggie and protein you crave, some spices, onion, Tamari sauce, and prepare for sweet indulgence.

Ingredients
  • 1-2 tablespoons extra virgin olive oil
  • 1 medium onion chopped
  • 2/3 cup fire-roasted red bell pepper
  • 1 teaspoon garlic minced
  • 1-2 zucchini green and/or yellow
  • 2 medium steaks sliced thin on a diagonal
  • 2 tablespoons Tamari soy sauce
  • 2 tablespoons brown sugar
  • 1/2 teaspoon rice wine vinegar (or Mirin)
  • 1-2 cups steamed rice
  • 1 head butter lettuce
Instructions
  1. Add some olive oil to a wok or skillet. On medium heat, sauté onion and red bell pepper until onions are clear. Add garlic and sauté another 1-2 minutes. Remove from heat and move to side dish. Add another dash of the oil to your skillet and sauté the zucchini until tender.

  2. In a small bowl, combine the Tamari sauce, brown sugar and red wine vinegar. Set aside.
  3. Thinly sliced beef, zucchini, onion, garlic, fire-roasted red bell pepper and Tamari sauce creates a delicious filling for lettuce wraps.
  4. Heat some oil in a skillet and sauté/brown the sliced beef for approx. 2-3 minutes, turning once. Add the sauce mixture above and sauté another minute. Add the veggies mixture, remove from heat and cover a few minutes while you prep the plates.

  5. Choose a bright colored butter lettuce for your wraps. They're easy to 'fill' and super fun finger food!
  6. On each plate place two pieces of butter lettuce, add a few spoonfuls of steamed rice, and add your beef and veggie mixture. Serve with a slice of sweet fruit.
