Italian Sausage Grinders
Gluten-free Italian Sausage Grinders w/ Sautéed Onion, Sweet Bell Peppers
I love a warm meal with grilled sweet bell peppers and onions, and these Italian sausage grinders made with g-free sausage on Udi's g-free multi-grain hamburger buns are s w e e t to the stomach!

When you start eating gluten-free, you will soon realize the importance of checking meats that either have been preserved or have been 'handcrafted' for gluten ingredients. In this recipe, I found a delicious g-free 'Classic Italian Sausage' by Framani Handcrafted Foods that's ideal. It contains no added MSG, no nitrates or nitrites, no antibiotics, no added hormones and 100% vegetarian feeds. I fully appreciate the labeling front and center on their packaging.

The bread is completely up to you - try something new each time. I used Udi's g-free multi-grain hamburger buns this time, and have also used Udi's g-free hot dog buns and Udi's g-free multi-grain bread. I like the consistency of the hamburger buns best. It probably would taste just as delicious over rice. I found the original recipe in an old issue of Anyone Can Cook magazine, and adapted it as follows:

Ingredients
  • 1 12 oz. package fully cooked Framani classic Italian sausage cut into thin, diagonal slices
  • 1 14.5- oz. can fire-roasted diced tomatoes undrained
  • 1 14.5- oz. can crushed tomatoes undrained
  • 1 teaspoon dried basil crushed
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon dried oregano crushed
  • 1/4 teaspoon salt
  • 2 teaspoons garlic cloves minced
  • 1 large diced onion
  • 1 sweet red/orange/yellow bell pepper or combo of the 3 cut into strips
  • 2 tablespoons olive oil extra virgin
  • 4 Udi's gluten-free multi-grain hamburger buns
  • 4 slices provolone cheese
Instructions
  1. In a large skillet, drizzle some olive oil and slightly brown the sliced Italian sausage. Since it's fully cooked you don't need to take a lot of time with this. Drain off any fat in the pan. Stir in the diced tomatoes, crushed tomatoes, basil, balsamic vinegar, oregano, salt, and garlic. Bring it to boiling, then reduce the heat and simmer, uncovered, about 25-30 minutes.
  2. In a separate skillet heat the olive oil, and caramelize the onion and sweet bell pepper slices. When at desired tenderness add to the Italian sausage combination above.
  3. Now to toast them up for serving ~ I use my toaster oven broiler, but using a conventional oven broiler obviously works as well. Line your toaster oven dish with foil, then place all eight halves of the hamburger buns on the grill plate. Spoon the sausage, onion and bell pepper mixture onto the buns, and top with a half slice of provolone cheese.
  4. I only broil these about 3 minutes until all ingredients are hot and the cheese is melted and bubbly, and serve them open-faced.
  5. A quick, hearty meal sure to please your stomach, and your friends/family ;o).
