Cherry Cream Cheese Martinis – gluten free

This recipe has floated around before grandma’s time… Keebler Ready Crust Graham Cracker crusts printed their recipe on the packaging. Here’s my delicious gluten free version. As a kid, it didn’t look interesting enough to try at the dessert socials. I’m so glad I grew up ;o).

Ingredients

  • 1 pkg cream cheese, 8 oz., softened

  • 1 can sweetened condensed milk, 14 oz.

  • 1/2 cup lemon juice (freshly squeezed is best)

  • 1 1/2 tsp vanilla

  • 1 can cherry pie filling, 21 oz.

  • 4 cups Kinnikinnick Foods graham style crumbs

  • 10 Jo-Sef square chocolate cookies, crumbled

Directions

  • In a medium sized bowl, beat softened cream cheese until fluffy. Beat in sweetened condensed milk, lemon juice, and vanilla. Batter should be free of lumps. Put bowl into the fridge for approx. 45 minutes to chill and set. Once batter is nice and thickly set, remove from the fridge.
  • Place the chocolate cookies between sheets of wax paper and roll with a rolling pin to crumble (size of the crumble is your choice). Line the bottom of the serving dishes (martini glasses, cute small glass serving dishes your grandma passed down to you, or the ones on display you’ve not found a use for…. yet.)
  • Layer next with graham style crumbs, followed by a heaping spoon of the cream cheese mixture, and then spoonfuls of the cherry pie filling. Repeat as many times as the container allows. You can get fancy and fun in a tall, slender clear glass with all those layers.
  • Store in the fridge until ready to serve. Hard to say how many this recipe makes, as it depends on your glassware. That said, it makes one 9-inch pie’s worth, about 6 servings, at the least. I made approx. 12 individually sized desserts with various sizes of glassware.
